I used to love the Tuna Tartar Towers and Ceviche before becoming plant-based. So I had to find a way to reinvent that fresh seafood taste to satisfy my wants. This Heart of Palms Ceviche Tower is soooooo good, refreshing, and just straight up delish...and surprisingly not as difficult to make as I originally anticipated. Like my Tuna-ish recipe, I think I cracked the code in making it taste seafoody…I could eat this anytime! It's the perfect appetizer to unwind, hang with friends, and indulge light and bright baby!
